Cabbage Coleslaw with tomatoes, cucumber, chickpeas and pickled oil

There is cabbage and mayonnaise, so it is a coleslaw. But then it has cucumbers, tomatoes and chickpeas. Then there is pickled oil and there are vadiyalu. So it is not the puritanical coleslaw by any measure, but it tastes really good. It has chickpeas to add the protein quotient and to make it a complete meal.



Recipe for Salad
1 big serving/2 medium servinggs

Ingredients
  • 2 cups cabbage shredded
  • 1 medium tomato sliced
  • 1/2 cucumber sliced 
  • 1/4 cup cooked chickpeas/garbanzo beans
  • 1 tbsp eggless mayonnaise
  • 1/4 tsp black pepper powder
  • sprinkling of salt to taste
  • 1/2 tsp oil floating on the pickle (Optional)
  • Few fryums or vodiyalu for the crunch (Optional)


Directions
  • Mix the cabbage, tomato, cucumber, chickpeas, salt, pepper and mayo and chill it for an hour in the fridge.
  • Just before eating, serve it on the plate and sprinkle the pickled oil. The pickled oil adds a nice spicy kick and a wonderful aroma. I have used the oil of the mango pickle and the salad had the faint mango smell.
  • Eat as a side dish or a complete meal as is with or without the fryums on the side.
