1/2 cup of left over rice and 1/2 cup of Matki or Moth bean sprouts and a rumbling tummy resulted in this bowl of good soup or Kanji. The disclaimer as usual, the photo might not do justice to the dish.
Recipe for the Kanji

Cooked Rice |

Tomato

Green Chilli
| 1 diced (Optional) |
Oil
| 1 tsp |
Matki/Moth bean sprouts or any other sprouts
| 1/2 cup |
Directions
- Pressure cook the rice with double the water to 2 whistles. This is to make the rice soft for the kanji. Slightly salt it if you want to.
- Heat a pan with the oil, add the tomatoes, the chilli and sprouts. Stir fry for about 4-5 minutes or more depending on how much you want it cooked.
- Season with salt and serve on the kanji.
- Mix both and slurp.
