Rice Kanji with Moth beans stir fry

1/2 cup of left over rice and 1/2 cup of Matki or Moth bean sprouts and a rumbling tummy resulted in this bowl of good soup or Kanji. The disclaimer as usual, the photo might not do justice to the dish.



Recipe for the Kanji
1 serving

Cooked Rice
 1/2 cup 
Tomato
 1 medium diced
Green Chilli
1 diced (Optional)
Oil
1 tsp
Matki/Moth bean sprouts or any other sprouts
1/2 cup

Directions
  • Pressure cook the rice with double the water to 2 whistles. This is to make the rice soft for the kanji. Slightly salt it if you want to.
  • Heat a pan with the oil, add the tomatoes, the chilli and sprouts. Stir fry for about 4-5 minutes or more depending on how much you want it cooked.
  • Season with salt and serve on the kanji.
  • Mix both and slurp.
