Pepper Roasted Cauliflower

How can a simple dish be so tasty? That was the question I had when I put the cauliflower in my mouth. All it needs is some time  and an absolutely hands off one at that. This is one of those dishes that are best forgotten once on the stove. Constant intervention only spoils it. My cauliflower is golden brown only because I added some turmeric like in everything else I cook.


Ingredients:

  1. Cauliflower florets broken into medium size : 2 cups
  2. Turmeric 1/4 tsp (Optional)
  3. Corn flour 1 tablespoon
  4. salt - 1/2 tsp
  5. Pepper powder 1/2 tsp or more depending on taste
  6. Oil - 1 tablespoon


Method:

  1. Heat a pan on medium with the oil.
  2. Add the florets and cook them on medium high covered for 5-7 minutes until they are just tender.
  3. Add the corn flour, turmeric and salt and mix into the curry.
  4. Cook again covered on medium flame for about 5 minutes.
  5. Now remove the lid and cook on low flame for about 15 minutes.
  6. At the end add the pepper powder and remove the from stove. 
The amount of time it takes to roast will depend on the freshness of the cauliflower and the size of the pan. If the pan is crowded then it will take longer and might turn mushy.
