Spinach and Corn Uttapam - Classic Combo in a new avatar

Slightly sour dosa/idli batter mixed with onions, chilli's is the way we usually make the uttappams. I am trying different combinations to increase the intake the vegetables and spice up the regular dishes. Spinach and corn compliment each other perfectly in many dishes. Tried to get them into the uttappam batter and the resulting dish was quite tasty. In many ways, it can be a one pot meal with all the necessary protein, vegetable and carbs together presented in a tasty combo.

Ingredients for 3 medium servings ( makes about 6 medium sized ones)
  1. 2 cups of millet dosa batter or regular dosa batter
  2. 2 packed cups of spinach diced. No need to saute them.
  3. 1 cup boiled corn kernels (if they are frozen, then thawing is sufficient)
Method
  1. Mix the batter with the spinach and the corn kernels.
  2. Adjust salt levels.
  3. Spread a ladle full of batter on a greased pan.
  4. Cover and cook for couple of minutes on one side on medium heat.
  5. Flip and cook for a few more on the other side until crisp. Drizzle half tea spoon of oil if crispy texture is desired.
Serve hot with coconut or peanut chutney and sambar for a delicious meal.
