Chapathi with a salad sabzi, Healthy and colorful lunch box

Bored of eating the same raw cucumber and tomatoes as salads. I have quickly stir fried them in the standard Indian tadka with 1 tea spoon oil. Filled the major section with curry and the minor with the Roti - reversal of roles for the health conscious. The sabzi turned quite tasty. Left the peel on the cucumbers to add to the fiber content. 



Recipe for the Cucumber Sabzi
1 large serving

Cucumber
 1 large diced into half moons
Tomato
 2 medium diced
Green Chilli
1 diced (Optional)
Oil
1 tsp
Mustard seeds, Cumin
1/tsp each

Directions
  • Heat pan with oil, add the mustard and cumin and after spluttering add the cucumber, tomato and chilli.
  • Quickly for 6-7 minutes. The goals is to just cook the cucumber and the tomatoes. The cucumbers should still retain the crunch.
  • Season with salt and serve with chapati or rice.
