Bored of eating the same raw cucumber and tomatoes as salads. I have quickly stir fried them in the standard Indian tadka with 1 tea spoon oil. Filled the major section with curry and the minor with the Roti - reversal of roles for the health conscious. The sabzi turned quite tasty. Left the peel on the cucumbers to add to the fiber content.
Recipe for the Cucumber Sabzi
1 large serving
Cucumber |
1 large diced into half moons

Tomato
| |
Green Chilli
| 1 diced (Optional) |
Oil
| 1 tsp |
Mustard seeds, Cumin
| 1/tsp each |
Directions
- Heat pan with oil, add the mustard and cumin and after spluttering add the cucumber, tomato and chilli.
- Quickly for 6-7 minutes. The goals is to just cook the cucumber and the tomatoes. The cucumbers should still retain the crunch.
- Season with salt and serve with chapati or rice.
