Easy Spinach Paratha With Curd, Pickle and Marinated Onions

Quick saute of onions, chilli and spinach stuffed into chapathi dough, turned out into this super yummy breakfast dish. I had some left over dough from the night before and wanting to have a sumptuous healthy dish and out comes the paratha. Recipe follows. Vegans can skip curd and butter. My picture taking skills leave a lot to be desired, but do not let that deter you from the yum quotient.






Recipe for the Spinach paratha
2 Medium parathas

Spinach
 1 cup diced
Onion
 1 medium diced
Black salt 
 1/4 tsp
Green Chilli 
 1 diced (Optional)
Aam Choor 
 1/4 tsp Optional

Directions
  • Quickly saute onions, chlli and spinach four couple of minutes in 1 tsp oil. The ideas is to just half cook them. They will again be cooked in the filling. We do not cook our vegetables to mush.
  • Mix together the black salt and aam choor into the spinach saute.
  • Roll a lime sized dough into the size of a poori, fill in half the stuffing. There are many videos of how to roll a stuffed paratha. One good place is here
  • Heat the pan and roast the paratha on both sides with little oil.
  • Add a tsp of butter, bowl of yogurt, pickle and onions (mixed with a little salt and lime juice) on the side for a good breakfast.
