Lettuce wraps with Soy Granules and Corn

The picture is perfect and so is the dish. Very rarely do I get both right, especially the picture. After cooking, I hardly have the time to plate it perfectly and take the good picture. I did not do anything special for this dish too, but the simple ingredients and the gorgeous colors stand out without any effort.

Soy granules and sweet corn wrapped into crunchy lettuce is a perfect appetizer or a guilt free snack. One of the quickest and tastiest snacks, I can ever make



Ingredients for 2 medium servings


  1. Soy Granules - 1/2 cup
  2. Bell Pepper - 1/4 cup diced
  3. Corn - boiled 1/2 cup
  4. Grated ginger - 1/2 tsp
  5. Grated garlic - 1 tsp 
  6. Soy sauce - 1 tbsp
  7. Tomato sauce - 1 tbsp
  8. Vinegar - 1tsp
  9. Pepper - Few pinches
  10. Salt - to taste
  11. Oil - 1tsp

  12. Ice berg lettuce - 1 head washed and patted dry


Method:


  1. Heat a pan on medium with the oil.
  2. Add the garlic and ginger and fry until the raw smell leaves for about a minute.
  3. Add the bell pepper and toss around on high heat for a minute.
  4. Add the corn and the rinsed soy granules. There is no need to soak them.
  5. Add the sauces and vinegar, salt and pepper and about 2 tbsp  of water.
  6. Cook covered on high heat for 2 minutes. Add more water if necessary.
  7. The end result should be slightly watery, just enough to spoon into the leaves.
If you have boiled corn, then it comes together in couple of minutes. If you are using fresh or frozen corn, quick for couple of minutes extra with a little more water. They can also be easily be omitted and the peppers can be doubled if necessary.The star of the show are the soy granules and the lettuce. Protein and carbs in one wholesome snack.
